PORK CHOP PEPPER STEAK

A long time ago, I learned how to make pepper steak from Mrs. Rice, my friend Mike’s mom. I’ve made it the same way for a long time. But now I’ve switched to pork chops and it’s a great change. I can’t say for sure that it’s an improvement on Mrs. Rice’s original, but I think she’d enjoy a plate of it—especially if you serve it with warm dinner rolls and some butter.

SERVES ABOUT 6

6 boneless pork chops, about 1/2 in/12 mm thick

1/4 cup/30 g flour

1/2 tsp salt

1/2 tsp black pepper

1/4 cup/60 ml vegetable oil

1 yellow onion, cut into medium dice

3 garlic cloves, crushed

One 28-oz/800-g can whole peeled tomatoes

1 cup/240 ml vegetable broth

2 tbsp soy sauce

2 green bell peppers, cut into 1/2-in/12-mm strips

Cooked white rice
